From multiple vineyard sites around the Paso Robles appellation comes the Fableist Cabernet Sauvignon. Actually, there is 1% of both Petit Sirah and Malbec and 2% Petit Verdot in the mix, though we won’t blame anyone who doesn’t notice. Aged in oak barrel (17% new) for 15 months, this delectable Cab shows notes of cassis, cedar, and blackberries. Serve with hearty cuts of red meat.
